# How to Make It:

01 - Preheat the oven to 400°F.
02 - Season scallops on both sides with salt, pepper, and smoked paprika.
03 - Wrap each scallop with a slice of beef bacon and secure with a toothpick.
04 - Heat olive oil in a large oven-safe skillet over medium-high heat.
05 - Sear the scallops for 2 minutes per side until the bacon is browned.
06 - Transfer the skillet to the preheated oven and bake for 5–7 minutes until scallops are opaque and bacon is crisp.
07 - While scallops are baking, melt butter in a small saucepan over medium heat. Add garlic and cook for 1 minute until fragrant.
08 - Stir in lemon zest, lemon juice, and parsley. Remove from heat.
09 - Remove scallops from the oven, discard toothpicks, and drizzle with lemon butter sauce. Serve immediately.

# Tips for Success:

01 -
  • The beef bacon brings this incredible deep smokiness that pairs beautifully with sweet, tender scallops
  • That lemon butter sauce cuts through the richness and brightens everything up perfectly
02 -
  • Dont crowd the pan or the scallops will steam and youll lose that precious crispy bacon
  • Let them rest just one minute after removing from the oven so the juices redistribute
03 -
  • Look for dry scallops rather than wet ones, theyll sear instead of steam and the texture difference is remarkable
  • Room temperature scallops cook more evenly, so take them out of the fridge 20 minutes before starting
