01 - Place the chicken thighs or breasts in the bottom of the crockpot.
02 - In a medium bowl, whisk together the soy sauce, honey, rice vinegar, brown sugar, sesame oil, garlic, and ginger until well combined.
03 - Pour the teriyaki sauce mixture over the chicken in the crockpot. Cover and cook on high for 4 hours or on low for 6-7 hours, until the chicken is tender and cooked through.
04 - Remove the chicken from the crockpot and shred or slice as desired.
05 - In a small bowl, mix the cornstarch and water to create a slurry. Stir the slurry into the sauce in the crockpot.
06 - Return the chicken to the crockpot, stir to coat with the thickened sauce, and cook for an additional 15-20 minutes on high until the sauce has thickened.
07 - Serve the teriyaki chicken over steamed rice and garnish with green onions and sesame seeds, if desired.
