02 - 3 tablespoons olive oil
03 - 4 garlic cloves, finely minced
04 - 2 tablespoons fresh parsley, chopped

06 - 1 teaspoon fresh rosemary, finely chopped or ½ teaspoon dried rosemary

07 - 1 teaspoon sea salt
08 - ½ teaspoon freshly ground black pepper
09 - 1 tablespoon lemon juice (optional)

# How to Make It:

01 - Preheat the oven to 425°F. Line a baking sheet with parchment paper or lightly grease it.
02 - In a large bowl, toss mushrooms with olive oil, garlic, parsley, thyme, rosemary, salt, and pepper until evenly coated.
03 - Spread the mushrooms in a single layer on the prepared baking sheet.
04 - Roast for 18 to 20 minutes, stirring once halfway through, until golden brown and tender.
05 - Remove from oven, drizzle with lemon juice if using, toss to coat, transfer to a serving dish, garnish with extra herbs, and serve hot.

# Tips for Success:

01 -
  • It takes almost no effort but tastes like you spent hours fussing over it.
  • The mushrooms get crispy edges and soak up all that garlicky, herby goodness.
  • You probably already have everything you need sitting in your pantry right now.
02 -
  • Don't wash mushrooms under running water, they absorb it like sponges and won't crisp up, just wipe them clean with a damp towel.
  • If your mushrooms release a lot of liquid halfway through roasting, don't panic, just drain it off and return them to the oven for a few extra minutes.
03 -
  • Use a mix of mushroom types like shiitake, oyster, or portobello for deeper flavor and varied texture.
  • Let the baking sheet get hot in the oven before adding the mushrooms, it helps them sear immediately and get even crispier.
