- Preheat oven to 375°F. Grease a 9x13-inch baking dish with cooking spray or butter.
- In a large skillet over medium heat, cook chopped bacon until crisp. Remove bacon with slotted spoon and set aside on paper towels, leaving 1-2 tablespoons bacon fat in the pan.
- Add ground beef to the skillet with bacon fat. Cook over medium-high heat, breaking up with a spatula, until browned and no longer pink, about 6-8 minutes. Drain excess fat if needed.
- Add diced onion and minced garlic to the beef. Sauté for 2-3 minutes, stirring frequently, until onion is softened and fragrant.
- Stir in diced tomatoes, chopped pickles, sugar-free ketchup, yellow mustard, Worcestershire sauce, smoked paprika, salt, and black pepper. Cook for 2-3 minutes to combine flavors, then remove from heat.
- In a separate medium bowl, whisk together softened cream cheese and heavy cream until smooth and well combined.
- Spread the beef mixture evenly in the prepared baking dish. Pour the cream cheese mixture over the top. Use a spatula to gently swirl and marble the cream mixture into the beef layer.
- Sprinkle shredded cheddar cheese evenly over the entire surface. Top with the reserved cooked bacon pieces.
- Bake uncovered for 20-25 minutes, until cheese is bubbly and lightly golden on top.
- Remove from oven and let rest for 5 minutes before serving. Garnish with sliced green onions or extra pickles if desired.
