01 - Preheat oven to 425°F. Line a large baking sheet with parchment paper.
02 - In a large bowl, toss cubed potatoes with olive oil, turmeric, cumin, garlic powder, smoked paprika, salt, and black pepper until evenly coated.
03 - Spread seasoned potatoes in a single layer on the prepared baking sheet.
04 - Roast for 30 to 35 minutes, turning once halfway through, until potatoes are golden and crispy on the edges.
05 - Remove from oven, transfer to a serving dish, and garnish with chopped cilantro or parsley. Serve hot with lemon wedges on the side.
