# What's Needed:

02 - 1/2 tsp salt
03 - 1/2 tsp black pepper

→ Vegetables & Aromatics

04 - 2 tbsp unsalted butter
05 - 1 tbsp olive oil
06 - 1 medium yellow onion, finely chopped
07 - 3 garlic cloves, minced
08 - 10 oz cremini or white mushrooms, sliced

→ Sauce

09 - 2 tbsp all-purpose flour
10 - 1 cup beef broth
11 - 1 tbsp Dijon mustard
12 - 1 tbsp Worcestershire sauce
13 - 1/2 cup sour cream, plus extra for serving
14 - 1 tbsp fresh parsley, chopped, plus extra for garnish

→ To Serve

15 - 10 oz wide egg noodles, cooked according to package instructions

# How to Make It:

01 - Sprinkle beef strips evenly with salt and black pepper.
02 - Heat 1 tablespoon butter and olive oil in a large skillet over medium-high heat. Add beef in batches and sear until browned, about 1-2 minutes per side. Remove beef and set aside.
03 - Add remaining butter and onion to the skillet. Cook until onion softens, 3-4 minutes. Incorporate garlic and mushrooms, sautéing until mushrooms are browned and liquid evaporates, approximately 5-7 minutes.
04 - Sprinkle flour over the sautéed vegetables and stir continuously for 1 minute to eliminate raw flour taste.
05 - Gradually pour in beef broth, stirring constantly to prevent lumps. Add Dijon mustard and Worcestershire sauce. Bring mixture to a simmer and cook for 2-3 minutes until sauce thickens slightly.
06 - Reduce heat to low. Stir in sour cream and parsley until fully combined and smooth. Ensure sauce does not boil after sour cream is incorporated.
07 - Return seared beef and any accumulated juices to the skillet. Gently fold to combine and heat through for 2-3 minutes. Taste and adjust seasoning if necessary.
08 - Plate stroganoff over warm egg noodles. Garnish with additional parsley and a spoonful of sour cream if desired.

# Tips for Success:

01 -
  • It transforms simple ingredients into an irresistibly creamy and hearty meal that feels special but is easy to make.
  • The combination of tender beef and earthy mushrooms in a luscious sauce quickly became a weeknight favorite for both friends and family.
02 -
  • Don&t rush the searing; it locks in juices and adds caramelized flavor that makes all the difference.
  • Adding sour cream at the end over low heat prevents curdling and keeps the sauce silky smooth.
03 -
  • Let the beef come to room temperature before cooking to ensure even searing.
  • Use a mix of butter and olive oil; butter alone burns easily, olive oil alone lacks flavor.
