# Tips for Success:

01 -
  • The beef becomes so tender it practically dissolves on your tongue, no knife skills required.
  • Everything cooks together, so you get these golden vegetables infused with beef flavor that taste like they belong together.
  • Eight hours of cooking means you can live your life and still have a restaurant-quality dinner waiting.
02 -
  • Don't skip the searing step even though it feels like an extra task—it's the difference between good roast beef and unforgettable roast beef.
  • If your slow cooker runs hot, eight hours might be too long and your beef can turn stringy; check at the six-hour mark the first time you make it.
  • The cooking liquid that collects is liquid gold—use it as gravy or freeze it for soups.
03 -
  • If your slow cooker heats aggressively, cook on the lowest setting possible or use an external temperature probe to ensure the beef stays tender rather than stringy.
  • Leftover roast beef makes incredible sandwiches or can be shredded for quick tacos, so don't hesitate to make extra.
