# How to Make It:

01 - Combine olive oil, minced garlic, cumin, coriander, smoked paprika, cinnamon, black pepper, and salt in a large bowl. Add lamb cubes and toss to coat thoroughly. Cover and refrigerate for at least 20 minutes or up to 4 hours for enhanced flavor.
02 - In a small bowl, mix Greek yogurt, chopped mint, lemon juice, minced garlic, salt, and pepper until combined. Refrigerate until serving.
03 - Thread marinated lamb cubes alternately with red onion wedges, red bell pepper chunks, and green bell pepper chunks onto skewers evenly.
04 - Heat grill or grill pan to medium-high. Lightly oil the grates to prevent sticking.
05 - Grill the skewers for 8 to 10 minutes, turning occasionally, until the lamb is browned outside and cooked to desired doneness.
06 - Plate the kebabs hot accompanied by mint yogurt sauce, lemon wedges, and optional flatbreads or rice.

# Tips for Success:

01 -
  • These kebabs come together quickly once the lamb marinates, making them perfect for when you want to impress without spending all day in the kitchen
  • The warm spices create an unforgettable flavor that somehow feels both exotic and deeply comforting
  • That mint yogurt sauce is like a cool, herby embrace that balances the richness of the lamb in the most satisfying way
02 -
  • The marinade time is crucial but flexible, at least 20 minutes gives you good flavor, but overnight transforms the lamb into something incredibly tender and deeply flavored
  • Don't skip the moment where you let each kebab sit on the hot grill for a moment before turning, this is how you get that beautiful caramelized crust that holds all the flavor
  • The difference between good and extraordinary is in the freshness of your spices, buy them whole and toast them if you can, the change is remarkable
03 -
  • Metal skewers are worth the investment, they heat up evenly and you'll never worry about them burning, plus they last forever
  • If your grill isn't hot enough, your lamb will steam instead of sear, and all that beautiful caramelization will be lost, so really let it get smoking before you start
  • The secret to tender lamb on the grill is not to flip constantly, let it develop that crust on each side before turning, and resist the urge to poke at it
