Refreshing Watermelon Sorbet (Printable)

A light frozen dessert blending ripe watermelon with lime and a touch of sweetness, perfect for cooling off on hot summer days.

# What's Needed:

→ Fruit

01 - 8 cups seedless watermelon, cubed (about 2.2 pounds)

→ Sweetener & Flavor

02 - 1/2 cup granulated sugar
03 - 2 tablespoons fresh lime juice
04 - Pinch of salt

# How to Make It:

01 - Place cubed watermelon in blender and blend until completely smooth.
02 - Pour puree through fine-mesh sieve into large bowl to remove pulp for smoother texture.
03 - Add sugar, lime juice, and salt to watermelon juice. Stir until sugar is fully dissolved.
04 - Pour mixture into shallow freezer-safe dish and freeze for 30 minutes.
05 - Stir vigorously with fork to break up ice crystals forming at edges.
06 - Repeat stirring every 30 minutes for approximately 3 hours until sorbet reaches scoopable, fluffy consistency.
07 - Serve immediately for softer texture or freeze longer for firmer consistency. If very hard, let sit at room temperature a few minutes before scooping.

# Tips for Success:

01 -
  • It tastes like pure sunshine with just enough tang to keep you coming back for another spoonful
  • The texture becomes impossibly smooth without needing an ice cream maker or any fancy equipment
02 -
  • Skiping the straining step gives you a more rustic texture but will not have that professional smooth mouthfeel
  • Stirring every thirty minutes is tedious but absolutely essential for preventing large ice crystals from forming
03 -
  • Chill your blender container and the mixing bowl in advance to help the sorbet freeze faster and more evenly
  • Use a metal pan for freezing because the cold conducts better and speeds up the process significantly
