01 - Place cubed watermelon in blender and blend until completely smooth.
02 - Pour puree through fine-mesh sieve into large bowl to remove pulp for smoother texture.
03 - Add sugar, lime juice, and salt to watermelon juice. Stir until sugar is fully dissolved.
04 - Pour mixture into shallow freezer-safe dish and freeze for 30 minutes.
05 - Stir vigorously with fork to break up ice crystals forming at edges.
06 - Repeat stirring every 30 minutes for approximately 3 hours until sorbet reaches scoopable, fluffy consistency.
07 - Serve immediately for softer texture or freeze longer for firmer consistency. If very hard, let sit at room temperature a few minutes before scooping.
