01 - In a medium bowl, whisk together flour, baking soda, baking powder, salt, ginger, cinnamon, cloves, and nutmeg. Set aside.
02 - In a large bowl, beat unsalted butter and dark brown sugar until light and fluffy, about 2 minutes.
03 - Beat in the egg, molasses, and vanilla extract until fully combined.
04 - Gradually add the dry ingredients to the wet mixture, mixing on low speed until a soft dough forms.
05 - Divide dough into two disks, wrap each in plastic wrap, and refrigerate for at least 1 hour.
06 - Preheat oven to 350°F. Line baking sheets with parchment paper.
07 - Roll chilled dough on a lightly floured surface to 1/4 inch thickness. Cut into gingerbread men shapes.
08 - Place cutouts 1 inch apart on prepared baking sheets.
